Healthy Fudge

10522311_1425271454428702_1678399608_nEating healthy is a vital part of the Fruiteatox lifestyle, but we could never deny ourselves dessert. Here’s our recipe for chocolate fudge made from black beans, with absolutely no refined sugar. The texture is a lot smoother than ‘real’ fudge and it’s best kept in a fridge to maintain its solidity, but it’s a great snack for a break in the afternoon or as a treat after dinner:

– 1 tin drained black beans

– 6 TBS virgin coconut oil

– 4 tbs raw cocoa

– 3 tbs natural honey

– Mixed seeds

Combine the black beans, coconut oil, cocoa and honey in a food processor until smooth.

Pour into a tin lined with greaseproof paper and level the surface.

Sprinkle as generously as you please with your choice of seeds, nuts, cocoa nibs, dries fruit or topping of your choice. For this particular batch, we used sunflower, pumpkin and sesame seeds for a contrasting crunchy texture.

Place in the fridge until set, then chop into squares and enjoy!
